Now we eat it about 3 times a month-SO EASY!
Salmon with Fruit Salsa over Jasmine rice.
1 can pineapple tidbits drained
2 TBS olive oil
1/4 finely chopped red onion
juice of 1 lime
finely chopped, pickled jalapenos (to taste)-I use a bit of the juice as well
chopped cilantro (the more the better for me)
salt and pepper
Make this in the morning
Then all you have to do is make the rice
and grill/or broil the salmon (salt and pepper only)
Spoon out rice
place salmon on top
spoon salsa over all!
This is only a method, adjust ingredients to taste-try strawberries, mango, etc . . .
