Default Stuffed Peppers

Here is my slimmed down version of stuffed peppers. I've been eating them leftover all week and I'm not tired of them yet, so I'm calling it a winner. I've always used ground beef, white rice, and eggs, so these are a lot lower calories and a lot less fat than "normal". My grandma used to use Worstershire sauce in a lot of things, but my mom doesn't like it, so I've never really cooked much with it. As I take the fat out of recipes using ground turkey or chicken, I find myself looking for some moisture to put back in. I've really become a fan of the stuff.

3 large bell peppers, cut in half and seeded

Mix:
1 pound ground turkey
1 cup cooked brown rice
1/2 onion chopped fine
2 cloves garlic, smashed
worstershire sauce to taste

Divide evenly between the peper halves. Top with sauce.

Sauce:
1 can tomato soup
1/4 cup brown sugar
worstershire sauce to taste

Bake covered at 350 degrees about 30 minutes. Uncover for another 10 minutes to thicken sauce.

I ran the recipe through calorie count and got 365 for three servings, so you get two halves. It's 3.2 grams of fat, but the sodium is high due to the worstershire. I think it was about 400 mgs when I figured I used four tablespoons.

Mmm, sounds delicious! I love stuffed peppers. They're very much a "fall" food to me, which I've been in the mood for as the weather cools off.

When I read your recipe earlier today, my fiancee was standing behind me and decided that he wanted this for dinner.

It turned out great! I only had a half pound of ground turkey thawed and in the fridge, so I added a half pound of ground chicken to it and it worked out fine.

If it can make him put a veggie in his mouth, I call it a winner.

This is very similar to how I make them, only I add additional diced bell pepper and diced celery to the mix...helps keep them even more moist! YUMMO!

This sounds DELICIOUS!! My mom used to make something similar when I was still living at home and I loved it then.... I'll definitely be trying it....

Well, witchy, I was thinkin' if they're good with ground turkey they might be good with a grain mix. Like maybe some lentils mixed with the rice? Honestly, until this new way of eating I never considered anything a main dish unless it had meat in it - preferably beef. Whole new way of thinking. I'll give it a try and see how it turns out.

I am so going to try these when peppers are a reasonable price here - at the moment they're over $3 each, so a little too pricy for me.

I think I'd substitute couscous or bulgar wheat for the rice as an alternative - that should be lovely and just lighten the texture a bit.

Oh... couscous, I think that would be interesting. I've never made stuffed peppers with rice or any kind of grain in them. Actually, the peppers I made were not your typical stuffed peppers. I used mini orange, red and yellow peppers and mixed the ground meat with some mexican seasonings. They were really yummy and make great appetizers. I should figure out how many calories those guys were and share the recipe if anyone is interested!

I've never cooked with couscous - just had it when eating out. Is it difficult to work with?

And don't worry about changing my recipes - I make most of them up based on somebody else's. That's the fun in cooking!

Couscous is dead easy to work with. Just put it in a bowl or jug, pour boiling water or stock over it and leave it for about 5 minutes. All you need to do is fluff it up with a fork.

I tend to use stock - couscous is rather tasteless when cooked with water....

I bet you could use TVP in these stuffed peppers. Texturized Vegetable Protein. Has the texture of ground beef.

Yum, I love stuffed peppers and your recipe sounds good. Of course nobody can leave a recipe alone, we all have to personalize! I would have to leave out the sugar. There is a good stuffed pepper soup recipe in the SBD recipes below, and sometimes, I just chop the peppers up and make it as a skillet dinner. Very versatile recipe.
