What does the term "exchanges" refer to? For example, Exchange: 2 lean meat, 2 vegetable.

It's the diabetic exchange diet, it's useful in both managing diabetes and losing weight.. I'll find some links for you. It teaches a lot about eating healthy, making good choices, etc. If you pick poor choices you just don't get to eat as much.

There's some info, if you google more you'll find different guidelines as far as how many exchanges/kcalories are allowed.
