Under the Atkins Diet, you can enjoy a wide variety of vegetables. Green vegetables are especially recommended. Vegetables in general contain very few carbohydrates and almost no fat. They also usually contain lots of vitamins and minerals, as well as dietary fiber. Most diets recommend higher vegetable consumption, and the Atkins Diet is no different. Please note that there are certain starchy vegetables that can’t be consumed on this diet, and others are off limits during the beginning phase.
