White Chili

recipe ingredients
1Tbsp. vegetable oil
1 lb. skinned, boned chicken breast halves, cut into small pieces
1/2 cup chopped shallots
3 cloves garlic, minced
1 can (14.5-ounce) no-salt-added whole tomatoes , undrained and coarsely chopped
1 can (14 1/4-ounce) fat free chicken broth
1 can (11-ounce) tomatillos, drained and coarsely chopped
1 can (4.5-ounce) chopped green chiles, undrained
1/2 tsp. dried oregano
1/2 tsp. coriander seeds, crushed
1/4 tsp. ground cumin
2 cans (16-ounce each) cannellini beans or other white beans
3 Tbsp. lime juice
1/4 tsp. pepper
4 oz. reduced fat cheddar cheese, shredded

recipe directions
Spray a large nonstick saucepan with cooking spray. Add oil; place over medium-high heat until hot. Add chicken; sauté 3 minutes or until done. Remove chicken from pan and set aside. Add shallots and garlic to pan; sauté 2 minutes or until tender. Stir in tomatoes and next 6 ingredients. Bring to a boil; reduce heat, and simmer 20 minutes. Add chicken and beans; cook 5 minutes or until thoroughly heated. Stir in lime juice and pepper. Top each serving with cheese.

    I TRIED THIS RECIPIE THIS WEEKEND AND IT WAS GREAT! I HAD TO SUBSTITUE CILANTRO FOR THE CORRIANDER AND CRUSHED TOMATILLO’S FOR THE DICED BUT IT CAME OUT. I ALSO USED ONLY 1/2 A FRESH LIME. MY HUSBAND LOVED IT WITH RICE. I CAN’T WAIT TO GET THE CORRIANDER SEEDS AND TRY IT AGAIN
