8 slices soft whole wheat bread, cut into 1/2 inch cubes
2 cups shredded reduced-fat Mozzarella cheese (8 ounces)
1 1/2 cups frozen green peas
1 1/2 cups frozen whole kernel corn
1 small onion, finely chopped (1/4 cup)
1 1/2 cups fat-free cholesterol-free egg product
1 (12-ounce) can evaporated skimmed milk
1/2 cup plain fat-free yogurt
1 tablespoon mustard
Preheat oven to 350*F. Spray an 8 inch square baking dish, with cooking spray.
Combine bread cubes, cheese, peas and onion in large bowl. Mix remaining ingredients; pour over bread mixture and stir to coat. Pour into baking dish.
Bake uncovered about 30 minutes or until golden brown and center is set.
