Two Cheese Potatoes Gratin

recipe ingredients
1 1/2 lbs. potatoes,cut into 1/4 inch slices
1 garlic clove
1/2 tsp. salt
1/8 tsp. red pepper
1/4 cup parmesan cheese
1/4 cup flour
2 cups skim milk
5 oz cheddar cheese, shredded

recipe directions
Place potato slices and garlic clove in saucepan and cover with water; bring to a boil and cook 8 minutes or until just tender. Drain and discard garlic. Place flour, salt and red pepper in a large saucepan. Gradually whisk in milk until blended. Cook over medium heat until thick and remove from heat; stir in cheese. Arrange half of potatoes in a baking dish which has been sprayed with nonstick spray. Pour half of sauce over slices. Repeat with remaining potatoes and sauce. Sprinkle with parmesan cheese. Bake at 350* for 25 minutes or until bubbly.

    I loved this recipe. I substituted low fat Velveeta for the cheeses and black pepper for the red pepper. I reduced the garlic to taste.
