Tomato Garden Lasagna

recipe ingredients
1 pound lasagna noodles, cooked
2 cups low fat cottage cheese
2 tablespoons fresh parsley
1/2 cup egg substitute
1/2 cup parmesan cheese
1/4 teaspoon salt
1/4 teaspoon pepper
8 ounces 93%lean ground beef
1 onion, chopped
2 cloves garlic, chopped
3 cups tomato, chopped
3 tablespoons chopped fresh basil
1/2 tesapoon fresh oregano
1 pound fresh spinach
1 pound zuccini, sliced

recipe directions
Cook lasagna noodles until al dente. In bowl, mix cottage chgeese, parsely, eggs, half of parmesan cheese, and half of the salt and pepper. In skillet, brown beef, onions and garlic together. Add tomatoes, basil, oregano and rest of salt and pepper. Simmer 30 minutes. Steam spinach and zucchini in seperate pots. Squeeze water from spinach. Spray lasagna pan with non stick cooking spray. Layer tomato sauce, noodles, spinach, cheese mixture then zucchini. Keep layering until all ingredients are used. Sprinkle rest of parmesan cheese on top. Bake at 350 degrees for one hour.

    I made this, and I made it 6 servings for 7.3 points each. I only used 9 lasagna noodles, because I just couldn’t possibly make any more layers… With the reduction of pasta, the point value really decreases. On weight watchers we all want more for less, right? With the point reduction, I also added 1/2 cup of low fat mozzerella to the top.

    It really was good. If you could add a topping of a good low point marinara – it would be AWESOME!

    Also make sure to really drain the spinach and zucchini, because it can get watery if you aren’t careful.

    I made this last night and it was so good, my wife & I ate more than we should have, oh well. I substituted regualr lasagna noodles for whole wheat ones & instead of beef, I used ground turkey to lower the calories & fat content. It was so good!!!

    Fantastic! It definitely has a healthy taste. My husband loves it. Will definitely make it again! I added a bit of corn starch to the sauce because it was so watery. It thickened it up and was delicious…

    Very delicious! When I made it I added mushrooms…mmmm soo good. I also added a little sprinkle of fat free mozzerella cheese to the top. Next time I make it I will cut back on how many noodles I use. I had a lot of extra noodles left over after making my layers. Using fewer noodles will be better around the belt πŸ™‚
