Sunny Green Beans

recipe ingredients
3/4 lb. green beans, trimmed
8 oz. yellow cherry tomatoes
1/2 small red onion, thinly sliced
1/2 cup shaved romano cheese
Basil Vinaigrette:
1/3 cup snipped fresh basil
3 Tbsp. red wine vinegar
2 Tbsp. chopped dried tomatoes
1 Tbsp. olive oil
2 cloves garlic, minced
1/4 tsp. salt
1/4 tsp. pepper

recipe directions
Combine vinaigrette ingredients and set aside. Cook green beans in boiling salted water about 8 minutes or until crisp tender. Drain, rinse with cold water, and drain again. Combine with halved tomatoes in a bowl. Toss in red onion and vinaigrette. Chill about 2 hours. Serve sprinkled with grated cheese.
