Summer Squash Salad
recipe ingredients
1 16 ounce package rotini or bow tie pasta, cooked
3 cups julienne summer squash, 2 inch pieces
1 1/2 cups chopped tomatoes
1 can rinsed and drained garbanzo beans
1 cup shredded lowfat mozzarella cheese, shredded
1/4 cup fresh chopped basil
1/3 cup lemon juice
2 teaspoons sugar
1/2 teaspoon pepper
1 tablespoon red wine vinegar
3 tablespoons olive oil
recipe directions
Rinse and drain cooked pasta and place in large bowl. In small bowl mix basil, lemon juice, sugar, pepper, oil and vinegar. Add mixture to pasta. Toss well to coat and add remaining ingredients. Chill before serving.
