recipe ingredients
2 thick cod filets, about 6 ounces each
1/2 cup frozen chopped spinach, thawed
1/2 cup nonfat cottage cheese
1 egg white
4 Tbsp. nonfat croutons, crushed
1/2 tsp. minced garlic
2 Tbsp. chopped onion
salt and pepper to taste
2 tsp. cornmeal
fresh lemon juice

recipe directions
Preheat oven to 425*F. Slice center of each cod filet about halfway through thickness to make a pocket. Spread open and spray with butter flavored cooking spray. Combine remaining ingredients (except cornmeal and lemon juice) in a small bowl. Divide stuffing evenly between the two filets, packing mixture into the pocket and mounding on top. Sprinkle with lemon juice, then sprinkle cornmeal over exposed side of fish. Bake for about 25 minutes or until fish is flakey.

    This recipe is really delicious. As a matter of fact I tried a different variation and stuffed boneless porkloin and just left out the butter flavor cooking spray and lemon juice, that was really good too. Thanks for the great recipe.
