Stellas Mock Guacamole

recipe ingredients
1 can (14 oz) asparagus cuts, drained
1 cup finely chopped tomatoes
1/3 cup chopped onions
2 T. finely chopped fresh cilantro
2 T. lowfat mayonnaise
1 T. lime juice
6 drops red pepper sauce
1 clove garlic, finely chopped
dash pepper

recipe directions
Place asparagus in blender. Cover and process til smooth. Mix asparagus and remaining ingredients. Cover and refrigerate at least one hour. Serve with lowfat tortilla chips.

    Excellant! Just need to get passed the initial smell of the canned asparagus. After chilling, the smell is gone. I took it to a potluck and no-one knew the difference!

    I have to admit when I read that this recipe called for asperagus instead of avacado, I was hesitant to make.I am however a guacomole junkie so I did. This is SO YUMMY! Its my new favorite recipe for parties. Eat all you want, it’s GUILT FREE!

    I have never been a big fan of asparagus, but I love guacamole, but cannot have it anymore since it’s so high in fat and calories. So I figured I’d give this a try, and I am sure glad I did. It’s absolutely wonderful! I added a finely chopped jalapeno to mine, and for the hot sauce I used Chipotle Tabasco sauce. I also used fat free sour cream in place of the sour cream (Only because I don’t eat mayo). It was so good, the person who submitted this, well, THANK YOU!

    What a surprise! It really was good! I absolutely detest canned vegetables … especially asparagus. I prefer my asparagus roasted and FRESH …. however I tried this recipe because I love guacamole, and was blown away by the fact that you can’t really even tell it’s asparagus, so even someone who hatges asparagus could eat this. The hour in the fridge really is important to the flavor of the finished product.
    Next time I’m going to steam fresh asparagus, and see if it works. Canned asparagus is just nasty stuff.
