Spinach Salad with Strawberries and Lemon Dressing

recipe ingredients
1 10 oz. bag of fresh spinach, washed and stems removed
2 C. sliced fresh strawberries
1/2 C sliced red or Vidalia onion
1 T freshly grated parmesan cheese
1/3 C fresh lemon juice ( about 1 1/2 lemons)
zest from the 2 lemons
3 T sugar
1 T oil
dash freshly ground pepper

recipe directions
Combine spinach, onion, and strawberries. Whisk together lemon juice, sugar, zest, oil, and pepper. Let sit while sugar dissolves. Just before serving, pour dressing over salad ingredients and sprinkle with fresh parmesan. Delicious!

    The dressing is quite lemony but it is a very tasty alternative to plain ol’ salad!

    Excellent salad & dressing! It got rave reviews at a dinner party. I substituted Splenda for sugar to cut calories. 5 stars!!

    This is a great light salad. Great when you’re tired of “lettuce & tomatos0. I left off the onions.

    Love this salad. Every time I have someone new to dinner, I serve it. I have to give the recipe to all who taste it. Sometimes I add boiled shrimp to it and serve it as a main course for my husband and me.

    A wonderful light, summer salad! I added chopped walnuts and reduced the lemon juice. Also used Splenda. :) :) :)

    Loved this salad! I also used splenda instead of sugar and I used a little sesame oil and mixed it in with the Olive Oil…It was very tasty. My fussy boyfriend loved it!! :)
