South of the Border Soup

recipe ingredients
3 cans vegetable broth
16 oz salsa
1 can black beans, canned
5 oz. tiny pasta shells
1 cup frozen corn
1/3 cup cilantro
1 Tbsp. lime juice
1 tsp. chili powder
1/4 tsp. cumin
1/4 tsp. black pepper
2 Tbsp. parmesan cheese

recipe directions
Heat broth to boiling in a dutch oven. Stir in remaining ingredients and simmer about 8 to 10 minutes, or until pasta is tender.

    Very good soup and a cinch to make! I used 2 cans of low sodium vegetable broth and 1 can of low sodium beef broth. I also used low sodium black beans. This recipe could produce a very salty soup if you don’t use the low sodium.

    I love this quick and easy soup! My family and friends also love it. I have varied it at times by adding salsa with lime juice and/or salsa with cilantro. I would give it a 10 plus.

    I was a liitle apprehensive when first trying the soup, but I needed a little variety in my menu and this was the perfect option. THIS SOUP IS GREAT. Its full of flavor and the first time I cooked it, I cooked it for lunch and dinner. I love it and i suggest the everyone try it.

    This soup was FANTASTIC! I had to make a couple of changes (I wasn’t fully prepared to make it). I didn’t have vegetable broth so I used 2 cans veggie juice & 1 can chicken broth. I had to substitute a can of Rotel for part of the salsa (didn’t have enough salsa). Lemon juice for the lime juice and I used 2 tbsp dried cilantro (didn’t have fresh). I added 1/2 lb ground beef to mine (I’m a meat girl). GREAT!!

    Great flavor! I used fat free chicken broth instead of the veggie broth, and I also diced up a few chicken breasts and threw them in ( a meal isn’t complete without meat). Turned out great! For the kids, I served it up with some fat free cheddar and baked tortilla chips - it was a huge hit!
