Shrimp with Tequila Tomato Sauce

recipe ingredients
2 tsp. olive oil
2 cloves garlic, minced
1 cup Plum tomatoes, diced
1/4 cup red onion, finely diced
1 jalapeno pepper, seeded, finely diced
2 Tbsp. tequila
2 tsp. cayenne pepper
1/4 tsp. Tabasco sauce
juice of 1/2 lemon
1 pound large shrimp, peeled and deveined

recipe directions
Combine all ingredients, except shrimp, in a bowl and refrigerate overnight to blend flavors.

Saute shrimp in a nonstick skillet until just done. Add sauce mixture to skillet and stir until it comes to a boil.

    This is very spicy, but excellent for us spicy food lovers. I did not refrigerate it as long as the recipe calls for, and it was still very good.
