Shrimp in Red Garlic Sauce

Sauce:
3/4 cup spicy V-8 vegetable juice
1 tbsp cornstarch
1 tbsp sugar
1 tbsp rice wine vinegar
1/8 tsp crushed red pepper flakes (optional)
1 celery stalk, chopped (1/2 cup)
2 tsp oil
2 cloves garlic, minced
12 oz frozen cooked medium shrimp, defrosted and drained
1/4 cup diagonally sliced green onions
2 cups hot cooked white rice

Combine sauce ingredients in a small bowl and set aside. In a 2-quart saucepan, combine celery, oil, and garlic. Cook over medium heat for 3 1/2 to 5 minutes, or until celery is tender-crisp, stirring occasionally. Add sauce mixture. Cook for 1 1/2 to 2 minutes, or until sauce thickens and bubbles, stirring constantly. Add shrimp and onions. Cook for additional 1-1/2 to 3 minutes, or until shrimp is hot, stirring frequently. Serve over rice.
