Savory Chicken and Rice

recipe ingredients
1 lb boneless skinless chicken breast halves
1 1/2 cups sliced mushrooms (4 oz)
1 cup baby cut carrots
1 1/2 cups water
1 pkg (4.1 oz) long grain and wild rice mix with chicken and herbs

recipe directions
Cut chicken into 1 inch pieces. Spray a nonstick skillet with nonstick cooking spray. Heat skillet over medium heat then add chicken. Stir and cook until chicken is no longer pink inside, about 5 minutes. Stir in remaining ingredients. Heat to boiling; reduce heat. Cover and simmer 15 minutes, stirring occasionally. Uncover and simmer about 3 or 4 more minutes, stirring occasionally, until carrots are tender.

    This recipe is very good. You get a decent helping of food for few calories. I am not a mushroom person, and I still found this tasty.

    Easy tasty & we both liked it. Will make again but will cut chicken up smaller pieces. Too big & they tend to be dry. Will try with broccoli but will add in last minutes of cooking to keep crispy.

    Provided a lot of food and quite tasty. I actually divided it into samller portion. I, also, pre-seasoned the chicken with a little seasoned salt, pepper and Mrs. Dash Garlic flaver.

    Looks like a good basic recipe; I am collecting recipes that go along with the Blood Type Genotype Teacher guidelines. Will let you know how it turns out!
