Salmon Salad Sandwiches

recipe ingredients
1 can (14 oz) Alaska salmon, drained
1/2 cup low fat mayonnaise
2 tsp. fresh dillweed, chopped
2 Tbsp. diced red onion
a few drops of liquid smoke
2 Tbsp. reduced fat bacon bits
6 slices fresh tomato
lettuce leaves
6 Tbsp. low fat mayonnaise
12 slices whole wheat bread

recipe directions
Combine the drained salmon, the 1/2 cup mayonnaise, dillweed, red onion, liquid smoke, and bacon bits.

For each sandwich: Spread 1/2 tablespoon of mayonnaise over one side each of 2 slices of bread. Top with the salmon salad mixture and a slice of tomato and lettuce leaf, then top with other slice of bread.

    I used 2/3 c. canola mayo and didn’t put any extra mayo on the sandwich,
    plus I added a little black pepper.

    This is an EXCELLENT salmon recipe and is great as is, on bread,
    with crackers or veggies.
