recipe ingredients
1 1/2 lbs. purple potatoes
1/4 tsp. dried thyme
1/4 tsp. salt
1/8 tsp. fresh ground black pepper
3 Tbsp. milk

recipe directions
Peel potatoes and cut into quarters. Cook, uncovered, in a small amount of boiling water for 15 minutes or until tender; drain. Mash with a potato masher or fork. Add thyme, salt and pepper. Gradually beat in milk to make light and fluffy, adding extra milk if necessary.

    The spices help the flavor, but be warned that purple potatoes often taste musty.

    We made the purple mashed, with butter and cream and veggie stock. It was delicious.

    However, after about 3 days of refrigeration the leftovers turned bright blueberry color. ?????

    I had these at the Fish Hopper in Hawaii they were outstanding so found them in my local Asian market here in Sunnyvale Ca. so I am cooking tonight and see if they taste as good .
