Roasted Yellow Pepper-and-Basil Vinaigrette
recipe ingredients
1 lb. yellow bell peppers, roasted and peeled
1/3 c. white wine vinegar
2 Tbsp. extra-virgin olive oil
1 1/2 tsp. dijon mustard
1/2 tsp. salt
1/4 tsp. sugar
1/8 tsp. pepper
1 garlic clove, minced
1/3 c. finely chopped fresh basil
recipe directions
Combine all ingredients except basil in a food processor and process until smooth; stir in basil.
