Roasted Potatoes with Rosemary and Goat Cheese

recipe ingredients
4 lb. baking potatoes, cut into cubes
2 Tbsp. chopped fresh rosemary
3 Tbsp. balsamic vinegar
1 Tbsp. olive oil
1/2 tsp. salt
1/4 tsp. pepper
6 cloves garlic, minced
3/4 cup crumbled goat cheese

recipe directions
Preheat oven to 400*F. Combine first 7 ingredients in a large zip-top plastic bag, turning well to coat. Arrange potato on a large jelly-roll pan coated with cooking spray. Bake for 45 minutes or until browned. Sprinkle with goat cheese and serve.
