Roasted Mangoes with Brown Sugar Topping

recipe ingredients
2 medium mangoes, halved lengthwise and pitted
2 Tbsp. brown sugar
2 Tbsp. flaked coconut
2 tsp. finely shredded orange peel
2 tsp. finely chopped crystalized ginger

recipe directions
Preheat oven to 425*F. Place mango halves in a 2 qt rectangular baking dish. Combine remaining ingredients and sprinkle over mango halves. Bake about 10 minutes or till mangoes are hot and topping just begins to brown.

    Yes, it is a delicious summer treat. Served it to guests at a cookout–rave reviews. I did add a scoop of vanilla ice cream.
