Red Beans and Rice

recipe ingredients
1 tsp canola oil
1 cup chopped onion
1 cup chopped red bell pepper
1 tsp finely chopped garlic
1 Tbsp chopped fresh thyme leaves
1/2 tsp each salt and cayenne pepper
2 1/4 cups water
1 cup converted long-grain rice
1 (15-oz) can red kidney beans, rinsed and drained

recipe directions
Heat oil in a nonstick skillet. Add onion, red pepper, and garlic Sauté until softened, about 6 minutes. Add thyme, salt, cayenne, rice and the water; bring to a boil. Reduce heat; simmer, covered, 20 minutes. Add beans; do not stir; remove from heat. Cover and let stand five minutes, then stir.

    I didn’t care for this recipe. It had heat, but it was very bland and boring. The texture was nice, but there just wasn’t much flavor.

    I like it but I usually make the “Jerk Chicken” recipe at the same time and then mix the two together. The chicken compliments it very nicely :)

    we love this recipe. not traditional red beans and rice but delicious. Not too salty, not mushy. I add a package of Healthy Choice smoked sausage.
