recipe ingredients
1/2 cup diced onion
1/2 cup diced red bell pepper
1 garlic clove, minced
1 teaspoon Cajun seasoning
1 (15-ounce) can black beans, rinsed and drained
1 (10-ounce) can diced tomatoes and green chiles, undrained
3 ounces turkey kielbasa, halved lengthwise and thinly sliced
7 cups hot cooked penne (about 3 cups uncooked tube-shaped pasta)
1/2 cup (2 ounces) preshredded 4-cheese Mexican recipe blend cheese (such as Sargento)

recipe directions
Place a large nonstick skillet coated with cooking spray over medium-high heat until hot. Add onion, bell pepper, and garlic; saute 5 minutes. Add seasoning; saute 1minute. Add beans, tomatoes, and kielbasa; bring to a boil. Reduce heat; simmer 10 minutes or until thick. Combine bean mixture and pasta in a large bowl. Top with cheese.

    This was a wonderful recipe. If you like hot food you may want to add a little more of the cajun seasoning. I’ll be trying this recipe again with chicken.

    I gave this recipe 5 smiley faces out of 5 in my cookbook. This recipe was excellent and I absolutely loved it. Instead of pasta I poured it over rice, but that was the only change I made. IT WAS PERFECT!

    This is wonderful! I forgot to add the cheese the first time and we liked it so much I don’t use cheese at all to cut more calories.

    We loved this recipe. However, I added a can of corn and omitted the cheese.

    This was so yummy. It was really unexpected how delicious this was. I substituted whole wheat noodles and didnt add the red pepper since they give me indigestion. It didn’t hurt the recipe at all. YUMMY!

    This recipe was great! I added another can of diced tomatoes because it seemed like something was missing. My husband loved it, too and didn’t even notice that it was turkey sausage!!!

    Love the simplicity of this recipe! We add more kielbasa (I think we use a whole package of the Turkey Store hot Italian sausage) and more diced tomato to make this dish more hearty. My husband and 16-month old love it!
