Parmesan Zucchini Strips

recipe ingredients
1/2 cup egg substitute
1/3 cup seasoned bread crumbs
1/4 cup Parmesan cheese
4 small zucchini, quartered lengthwise

recipe directions
Preheat oven to 450*F. Pour egg substitute into a shallow dish. Combine bread crumbs and cheese in another shallow dish. Dip zucchini quarters into egg, then roll in bread crumb mixture to coat. Place on a baking dish that has been sprayed with nonstick cooking spray. Bake 18 to 25 minutes, or until golden brown and tender.

    I thought this recipe was very tasty. My fiance is fussy about eating vegetables, but he gobbled this right up! I’ll definitely be making this again.

    This was great.My husband doesn’t really like zuccini that well but after he tried it he ate several servings. Grandkids loved it.I love zuccini so this gives me another way to get the family to eat there veggies.

    Very easy to make and tastes wonderful. Even my anti-vegetable 13 year old gave it a thumbs up! Definately will make again.

    I make these all the time without the Parmesan cheese, and use saltines to coat instead. It makes the zucchini REALLLLLY crunchy.

    Do it with green beans as well! ITS AWESOME!!! my favorite dish ever.

    The taste of the breadcrumbs was completely overpowering. Scraped the coating off and the zucchini was great!

    I really miss having fried foods sometimes. This recipe was wonderful! I will NEVER fry squash again! This is so easy, tastes like fried without having to stand at the stove and tend to it, and it is so much better for you! This is a keeper recipe in our household! I can’t wait to try whole okra like this!

    This was a HUGE hit!!!! The husband really enjoyed. As a matter of fact, I have some zucchini in the fridge…..guess what I am gonna make RIGHT NOW!!!!!!
