Parmesan Chicken with Fresh Tomato Sauce

recipe ingredients
1 envelope Butter Buds® Mix
1/2 cup hot water
1/2 cup plain bread crumbs
2 tablespoons grated parmesan cheese
1 teaspoon dried oregano
1/4 teaspoon ground black pepper
4 skinned and boned chicken breast halves (about 1 lb.),
4 small tomatoes, seeded and chopped
1/4 cup fresh basil, cut in julienne strips
1-1/2 teaspoons balsamic vinegar

recipe directions
Preheat oven to 425°F. Spray a baking sheet with non-stick cooking spray. In a shallow dish combine Butter Buds and water, stirring to dissolve. In another dish combine the crumbs, cheese, oregano and pepper. Dip each chicken breast half into Butter Buds mixture and then into crumb mixture. Arrange chicken on a baking sheet. Bake 20 minutes, turning once. In a medium bowl combine tomatoes, basil and vinegar. To serve, spoon 1/4 of the tomato mixture on top of each chicken breast.

    I love this recipe! I make it all the time. Instead of butter buds and water, I dip the chicken in fat-free milk. You can also use Italian Style bread crumbs and parmesan cheese instead of having to add the seasonings to plain bread crumbs. I’ve used both fresh and dried basil, big difference. The fresh is so much better.
