Oven Roasted Root Vegetables

recipe ingredients
2 medium sweet potatoes
1 medium parsnip
1 cup peeled baby carrots
1 medium red onion
1 Tbsp. olive oil
1 tsp dried Italian herbs
salt and pepper to taste

recipe directions
Preheat oven to 425*F. Peel vegetables and cut into 1 inch pieces. Place in a 9×13 baking dish. Drizzle with the oil and sprinkle with herbs, salt and pepper. Stir to coat. Cover with foil and roast in oven for 30 minutes. Remove foil and continue roasting for 5 or 10 minutes more, until tender.

    Loved these veggies. Not the parsnips so much, though, and also added garlic. Thanks!
