Nutmeg Bread

1/2 cup margarine, softened
2/3 cup sugar
1 egg
2 cups sifted flour
1/2 tsp. baking powder
1/2 tsp. baking soda
1 Tbsp. freshly grated nutmeg or 1 tsp. ground nutmeg
1 cup lowfat buttermilk

Preheat oven to 350*F. In a mixer bowl, cream margarine and sugar. Add egg and mix well. In a seperate bowl, sift dry ingredients together twice. Add flour mixture and buttermilk alternately to egg mixture, beginning and ending with flour. Lightly spray a 9×5 loaf pan with nonstick cooking spray. Pour in batter and bake 45 to 60 minutes or until toothpick inserted in center comes out clean. Cool in pan 10 minutes then transfer to wire rack to cool. Cut into 16 slices to serve.
