Mustard Herb Potatoes

recipe ingredients
8 large potatoes
1/2 cup Dijon mustard
1 Tbsp. olive oil
2 cloves garlic, minced
2 tsp. Italian seasoning herbs
2 tsp. fresh snipped basil

recipe directions
Preheat oven to 425*F. Scrub potatoes and cut into 1 inch cubes (do not peel). Combine remaining ingredients, and toss with potato chunks. Place in a large baking pan or cookie sheet which has been sprayed with cooking spray. Bake for 30 to 40 minutes, turning occasionally.
