Mushroom Pizzettes

recipe ingredients
1/2 cup warm water
3/4 tsp. yeast
1 tsp. sugar
3/4 cup bread flour
3/4 cup whole wheat flour
1/4 tsp. salt
2 tsp. olive oil
1/4 cup diced onions
1 cup sliced mushrooms
1/4 cup parmesan cheese
1/4 cup shredded part skim mozzarella cheese
1 cup fat free pizza or spaghetti sauce

recipe directions
Mix yeast, sugar, and warm water in a small bowl; let stand 5 minutes. Combine flours and salt in a medium bowl. Stir in oil and yeast mixture; mix until smooth. Turn onto floured surface and knead until smooth and elastic. Let rise until doubled in covered bowl which has been sprayed with nonstick spray Punch down; place on lightly floured surface and knead 2 minutes more. Roll out and cut with 2 inch cookie cutter. Roll scraps and keep cutting until you have 32 rounds. Place rounds on a baking sheet which has been sprayed with nonstick spray. Let rise about 15 minutes, or until lightly raised. Top each round with sauce and toppings. Bake at 400* about 7-10 minutes, or until lightly browned around edges. Watch carefully.
