Mushroom Pilaf

recipe ingredients
1 Tbsp. olive oil
1/2 cup minced fresh onion
1 garlic clove, minced
2 cups low-salt chicken broth
1/2 tsp. salt
1/2 tsp. white pepper
1 cup uncooked basmati rice
1/4 cup chopped chives
1/4 cup thinly sliced green onions
8 oz package mushrooms, chopped

recipe directions
Heat oil in a medium saucepan over medium-high heat. Add onion and garlic, and saute 2 minutes. Add broth, salt, and pepper. Bring to a boil; add rice. Cover, reduce heat, and simmer 35 minutes. Remove from heat; let stand 5 minutes. Stir in chives, green onions, and mushrooms.

    This recipe is lovely. Easy to make and even my husband, who claims to dislike any low-fat recipe — especially one made with mushrooms — gobbled it down. The only hard part is keeping the serving to half a cup! I paired it with grilled salmon and steamed asparagus, which was perfect. This will become one of our regular side dishes.

    This is delicious! I served it with Grilled Flank Steak with Onions. I sauteed the mushrooms in 1 tsp. of light margarine before I added them into the rice. Just thought it sounded weird adding them in raw. This will definately become a regular in my kitchen!

    This is the best! I have made more than once now and like it every time! Was very simple to make!
