Mediterranean Pasta

recipe ingredients
4 cups chopped tomato
1 tablespoon olive oil
1 tablespoon red wine vinegar
2 tablespoons chopped fresh basil
1/4 teaspoon salt
1/8 teaspoon crushed red pepper
1 clove garlic — minced
4 cups cooked angel hair pasta
1/4 cup crumbled feta cheese — (1 ounce)

recipe directions
Combine all ingredients except feta cheese. Divide mixture evenly among 4 plates. Sprinkle with feta cheese and serve.

    I accidentally clicked 2 but meant to click 3. This recipe was okay, but I don’t know that I would try it again. I honestly think I would have rather had canned tomatoes than fresh tomatoes. And I’m just not sure how I feel about vinegar on pasta. The feta on top was really great though and is something I might do again in the future on other recipes. Also, the idea of “Greek” pasta was very unique- something I would play around with again in the future.
