Mediterranean Chicken & Rice Bake

recipe ingredients
1 can (14 1/2 ounces) fat free chicken broth
1/4 cup chopped fresh parsley
1/4 cup sliced ripe olives
1 tablespoon lemon juice
1/4 teaspoon pepper
1 can (about 14 1/2 ounces) stewed tomatoes
1 1/4 cups uncooked regular long-grain rice
6 skinless, boneless chicken breast halves (about 1 1/2 pounds)

recipe directions
In 3-quart shallow baking dish mix broth, parsley, olives, lemon juice, pepper, tomatoes and rice. Cover and bake at 375°F. for 20 minutes. Place chicken on mixture. Sprinkle garlic powder and paprika over chicken. Bake uncovered 30 minutes more or until chicken is no longer pink and rice is done.

    this has so much flavor! You do not need any extra seasoning. Love this one!!!

    I liked the overall taste of the dish but I didn’t like how watery the rice turned out. Way too much liquid somehow. But like I said the taste was good.

    AMAZING!!! I cooked it for a dinner party and it makes a fabulous presentation and oh so good! Make sure you cover the rice when it bakes or it will be crunchy. (oops!) I’d also add a little more salt and pepper than called for and less chicken broth. I’ll make it again for sure!!! :)

    My wife and I enjoyed this meal a lot. I added 1/4 cup more rice because of the other reviews, and it worked out perfectly. Will make this one for friends.
