Mediterranean Breaded Vegetables

recipe ingredients
2 large egg whites
3/4 cup bread crumbs
1 tsp. salt
1/4 tsp. black pepper
1/4 tsp. cinnamon
1/2 tsp. curry
2 tsp. cumin
1 tsp. oregano
1 small yellow squash
4 large white mushrooms
1 cup cauliflower florets
1 red bell pepper

Cut squash lengthwise in half, then quartered. Cut red bell pepper into wide strips.

Combine bread crumbs and seasonings in a bowl. In another bowl, whisk egg whites. Dip vegetable pieces into egg whites, then roll in bread crumb mixture. Place on a baking sheet which has been sprayed with nonstick cooking spray. Spray tops of breaded vegetables with a little more cooking spray.

Bake at 400*F for 10 minutes or until lightly browned.
