Marinated Poached Peaches
recipe ingredients
10 medium peaches
2 Tbsp. whole allspice
10 cinnamon sticks
1/2 cup sugar

Place peaches in large saucepan or stockpot. Cover with water, add allspice and cinnamon. Bring to a boil over high heat. Boil 2 minutes, remove peaches and pell when cool enough to handle. Add sugar to boiling poaching water and boil 5 minutes. Add peaches and simmer 2 minutes more. Remove from heat; cool to room temperature in poaching liquid. Place peaches and liquid in airtight container and chill 3 hours or overnight. Serve cold.
