Marinated Asparagus

recipe ingredients
1 1/2 lb. asparagus
3 Tbsp. white wine vinegar
2 Tbsp. water
2 Tbsp. lemon juice
1 Tbsp. oil
3/4 tsp. dry mustard
3/4 tsp. grated lemon rind
1/8 tsp. pepper
1 small jar (2 oz) diced pimiento, drained
3 Tbsp. crumbled bleu cheese

recipe directions
Trim asparagus and snap off tough ends. Steam in a vegetable or asparagus steamer for 4 or 5 minutes, or until crisp tender. Place asparagus in a shallow dish. Combine remaining ingredients in a jar, except bleu cheese, and shake well. Pour over asparagus, cover and chill 1 hour. Just before serving, sprinkle with bleu cheese.

    Oh My, This is excellent. Everyone loved this. Even the kids in my day care. As parents came in the door, I gave them a taste. They all demanded the recipe. I blanched my asparagus for 1 minute and it came out perfect. Also used Splenda in place of the sugar. Thank you for a recipe I will use again and again.
