1 cup rolled oats
1 cup fresh cranberries
1/4 cup maple syrup
1/4 cup honey or fruit juice concentrate
1 tsp. vanilla extract
4 large apples, peeled cored and sliced
1/3 cup light brown sugar
1 tsp. cinnamon
Place oats and cranberries in food processor and process in spurts to pulverize. Pour into a large mixing bowl.
In a small saucepan, combine maple syrup, honey or fruit juce concentrate, and vanilla. Bring to a simmer over medium heat and pour over dry mixture. Stir well, working the syrup into the mixture with your hands.
Place apple slices in a deep baking dish. Combine brown sugar and cinnamon, and sprinkle atop the apples. Top all with the cranberry-oat mixture.
Bake at 375 degrees until the oat mixture lightly browns and the fruit softens. If the oats become brown too fast, cover dish with foil and lower heat to 325 degrees until apples are soft.
Serve with nonfat frozen yogurt, if desired.
