Condiments can add flavor and variety to ordinary foods without adding extra fat. Salsas can be used on everything from grilled fish to baked potatoes. Fresh salad dressings are delicious and versatile, and don't have the typical "paste" flavor of many commercial nonfat dressings.
Fresh tomatoes are the basis of most salsas, pasta sauces, and some dressings. Choose brightly colored tomatoes without blemishes. If available, buy tomatoes on the vine for freshest flavor. Or grown your own for the best quality. Store tomatoes at room temperature and use within 3 days of achieving ripeness. To peel, submerge tomatoes in boiling water for 30 seconds, then plunge into cold water, drain and slip off skins.
