Appetizer Recipes
Appetizers should be enjoyed very carefully. Many are very rich and have a high content of hidden fats. Instead, serve lowfat appetizers such as pickled mushrooms, baked potato skins topped with lowfat toppings, or other foods high in flavor but low in fat. Resist the urge to turn the appetizer into your meal by filling up on sparkling water or raw vegetables with nonfat dips.
Mushroom caps can be stuffed with almost anything for a delicious appetizer. Try nonfat cream cheese blended with chives for a quick stuffing. Or for a more elegant taste, use a crabmeat and breadcrumb stuffing. The mushrooms will be naturally juicy, so oils are not needed. Cherry tomatoes are perfect if you wish to server a cold stuffed vegetable. Sweet bell peppers are now available in tiny hybrid varieties which are also perfect for appetizers. Shrimp Cocktail also makes an ideal appetizer that is always popular, yet low in fat.
