Linguine with Spicy Shrimp Sauce

recipe ingredients
12 oz pasta
12 oz shrimp, peeled and deveined
3 red bell peppers, cut into very thin strips
3 scallions, sliced thin
2 Tbsp. smooth peanut butter
1 Tbsp. sesame oil
1/2 cup nonfat chicken broth
1/2 tsp. crushed red pepper
1 jalapeno pepper, seeded and sliced very thin
1/2 tsp. ground ginger
1 Tbsp. low sodium soy sauce
1 Tbsp. rice vinegar

recipe directions
Prepare pasta according to package directions. While pasta is cooking, combine peanut butter, sesame oil, and chicken broth in a saucepan and stir until smooth. Add remaining ingredients and blend well. Cover and simmer until vegetables are soft and shrimp is done, about 2 or 3 minutes. Toss with pasta and serve.

    Shrimp & Peanut Butter?! I thought it was insane, but it is a great recipe!
