Lime Cilantro Coleslaw
recipe ingredients
1/2 cup light mayonnaise
2 Tbsp. sugar
2 Tbsp. lime juice (fresh squeezed)
1/2 tsp. dry mustard
1 tsp. kosher salt
6 cups (1 lb) coleslaw mix, or shredded cabbage
1/4 cup fresh cilantro, chopped

Combine first five ingredients, mayo through salt, in a bowl until well blended. Stir in cabbage and cilantro and mix well. Chill for at least one hour before serving.
Great with grilled chicken sandwiches!

This recipe is extremely easy and quick to make and is a refreshing, light change from ordinary coleslaw. The cilantro and lime juice give it a nice kick, and make this dish pair nicely with either South East Asian or Latin American entrees. The only change I would make to the recipe is to use regular salt rather than kosher salt. There’s not enough liquid in the sauce to adequately dissolve the large grains of kosher salt, resulting in a dressing that’s a bit crunchy.
I thought the dressing was a little too tangy, next time I will cut back on the lime juice. Other than that, I found it very different and refreshing! I just used regular salt, so no crunch problem there!
My family loved this recipe. We have had it once a week since I discovered it. This one is definately worth trying. It will be a keeper for me and my family. LOVE IT!!
