Lemon Fried Chicken

recipe ingredients
1/4 cup flour
1 teaspoon salt
1 teaspoon pepper
1/4 teaspoon paprika
6 boneless, skinless chicken breast halves
2 tablespoons Brummel and Brown Yogurt Spread (or your own margarine)
1/2 tablespoon minced garlic
1 large lemon, juiced
1 large lime, juiced
2 cups fresh sliced mushrooms
1 green onion, sliced
1/4 cup white wine, optional

recipe directions
Mix flour, salt, pepper and paprika in plastic bag. Add chicken three pieces at a time and shake well to coat. Brown chicken in skillet in melted yogurt spread (or margarine). When browned, add garlic and juice. When juice is almost gone add mushrooms and saute for approximately 5 minutes. Add green onions and wine, if desired and cook approximately 15 minutes, until chicken is no longer pink and mushrooms have browned. Serve with rice or fresh vegetables.

    This is a very easy recipe! My family loved it and it gives a nice twist to the ordinary grilled chicken that I eat everyday. Very good for Salads.

    This was easy to make and very tasty! It was too difficult to saute the mushrooms with the chicken in the pan, so I removed the chicken just long enough to do that even though the recipe didn’t say to do that.

    wow, wow, wow. Unbelievably tasty! The chicken turns out so very tender! Definitely use the wine. It brings out the citrus flavor. This recipe is to die for and SO low in points. Fills the whole house with a wonderful savory smell, and has a nice little spicy kick to it!

    This was gross. The flour coating on the chicken got mushy from the lemon juice and it was soooo SOUR.

    This recipe was fabulous. Used breast of chicken and also a couple of thighs and both came out moist, tender and the citrus added a tangy crispness in flavor. Definitely a winner!

    Wow! Great recipe! I used fat free chicken broth instead of the wine (more kid friendly), and added about a cup more then the recipe called for. The flour from the chicken thickened the broth, the mushrooms absorbed all of the wonderful citrus flavors, and I had a great flavorful sauce that I poured over the chicken and some brown rice. Wonderful!!!

    My husband and I love this so much, we have it atleast once a week! It’s a great new chicken recipe that is very easy and doesn’t take long to make! My husband likes it more when the chicken gets crispy on the outside from the garlic!

    This recipe is great. We make it all the time. We love the mushrooms, I always use an entire carton of fresh mushrooms. They are delicious.

    I thought this was really yummy. It was very moist, and the mushrooms were so full of flavor it really enhanced the chicken to make sure you had a bite of mushroom with it. I didn’t have any wine, so just skipped that and it was still good, added a bit more garlic to sort of offset the lemony taste. I think this recipe has a lot of forgiveness to make whatever modifications make you happy and it will still come out good.
