Impossible Vegetable Pie

recipe ingredients
1 box frozen chopped broccoli, thawed but not cooked
1/3 cup chopped onion
1/3 cup chopped green bell pepper
1 cup shredded cheddar cheese (4 ounces)
1/2 cup Bisquick® Original baking mix
1 cup milk
1/2 tsp. salt
1/4 tsp. pepper
1/2 cup egg beaters or other egg substitute

recipe directions
Preheat oven to 400°. Spray 9-inch pie plate with nonstick spray. Stir together thawed broccoli, onion, bell pepper and cheese and pour into pie plate. Stir remaining ingredients until blended. Pour over vegetables in pie plate. Bake 35 to 40 minutes or until golden brown and knife inserted in center comes out clean. Cool 5 minutes.

    I really liked this recipie, and will probably use it again with spinach and mushrooms instead. It reheats well — I took it to work for lunch. It came out a little runny, and I think I’ll add a little less milk next time.

    Great recipe, fast, easy and tasty. Similar to a quiche, without the crust! I suggest draining the frozen broccoli before adding it to the recipe; reheats better, less water.

    My husband and I loved it. I added cumin to give it some zing and it was great. Reheats well. Could also adapt to give it a southwestern taste - just add salsa and spices. Could give it an italian flair - add oregano and basil. Used fat free sour cream as a topping to “dress it up”. Will make many more times.

    I made this today and I must say. IT WAS DELICIOUS.Extremely easy and I will be making it again. I added tomatoes. Yum. Reminds one of Quiche but without the crust and the bacon. Very, very delicious.

    This recipe is very good. We followed the recipe exactly, but it would be easy to adapt with different vegetables and/or seasonings. It would also be good served with salsa.

    I added corn and mushrooms and substituted soy milk and an organic pancake mix for the Bisquick. It was fantastic, not too eggy, and light and fluffy. Thanks for the great idea!

    this is one of my favorite recipes. it is easy and very, very, tasty. I gave one of my very thin friends a piece of this to see if a non dieter would like it. after she polished it off in record time, she said “next time, bring me a bigger piece!”

    I have made this recipe lots of times but instead of frozen broccoli I use combination of frozen veggies (medium bowl full) and it is always good. Everytime I serve this I get asked for the recipe. I love it!

    Very Good! Added less milk/more Bisquick and used a frozen vegetable medley instead. Topped with extra shredded cheese

    I made mine with cheddar cheese, feta cheese, spinach, mushrooms, diced tomatoes, and green onions. Delicious! And sour cream on the side. Thanks for the inspiration!
