Hoppin’ Jalapenos!

12 jalapeno peppers
3 ounces neufchatel cheese (light cream cheese), room temperature
1/2 cup lowfat cheddar cheese, shredded
1/4 cup green onions, finely chopped
recipe directions
Carefully cut each jalapeņo lengthwise. Under running water, rinse out the seeds and remove the stems and veins. In a small mixing bowl, mix cheeses and onions. Use a small spoon to stuff each jalapeņo half with the cheese mixture. Bake the peppers in a 350 degree oven for about 15 minutes, or until the cheese melts.

My maid of honor served these at my bridal shower and they were delicious! All the women there couldn’t believe it was diet food!!!
These are very easy to make (just don’t touch your face with your hands after handling the jalapenos!!). Very tasty and spicy!
These were a big hit. Make sure you wear gloves or somthing when you are taking the seeds out! I did find a home remedy that seems to work well for the Jalapeno burn. I used rubbing alcohol as a swab. Took the burn away with in a few minutes.
