Healthy Blueberry Muffins

recipe ingredients
1 3/4 cup whole wheat flour
2 tsp. baking powder
1 tsp. baking soda
1/2 cup oat bran
1/2 cup wheat germ
2 tsp. ground cinnamon
1 cup applesauce
1/4 cup orange juice
2 cups frozen blueberries
1 tbsp. canola oil
2 tsp. vanilla extract
2 eggs, whites only
3/4 cup maple syrup

recipe directions
1. Preheat oven to 400 degrees.

2. Mix all dry ingredients.

3. Gently stir blueberries into dry ingredients.

4. In a separate bowl, mix all remaining ingredients.

5. Gently combine both bowls, but don’t overmix.

6. Spoon into 20 greased muffin tins.

7. Bake for 20-25 minutes or until golden brown.

    are there really 120 g of sodium in the healthy blueberry muffins? If so, where do they come from.

    Many people have been asking me for the recipe but are reluctant to try them when they see the sodium count.

    Brenda, the sodium comes from the baking powder, baking soda, and other ingredients. I just checked the data and it is 120 milligrams of sodium.

    I really didn’t enjoy these muffins as much as everyone else. I’m an excellent cook, and I did everything spot on. The flavor just wasn’t there. I think adding some salt (even half a teaspoon) would be a noticeable improvement to this recipe.

    They do smell great, and the batter tastes good raw, but when baked, they are a bit bland, and taste very “healthy”.

    I do appreciate the health benefits of this recipe, but I’m not sure I’d bake these again.
