recipe ingredients
2 cups unbleached all-purpose flour
3/4 cup hazelnuts, toasted and skinned
3/4 cup brown sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 egg whites
1 tablespoon canola oil
6 tablespoons unsweetened applesauce
1 whole pear, peeled and coarsely chopped
1/4 cup water

recipe directions
Preheat the oven to 350°F. Spray a standard-size (9 x 5-inch) loaf pan with non-stick cooking spray. Combine the flour, hazelnuts, brown sugar, baking powder, baking soda, and salt in a food processor and process for about 1 minute, or until the nuts are finely chopped. Add all the remaining ingredients to the food processor and process until blended. Pour the batter into the prepared loaf pan.

Bake in the preheated oven for about 50 to 60 minutes, or until a knife inserted in the center comes out clean.

Allow to cool for 20 to 30 minutes on a wire rack before removing the bread from the pan. Allow to cool for 30 more minutes before cutting into 16 slices.
