3 egg yolks, beaten
1 cup white sugar
3 cups skim milk
1/4 tsp. salt
4 cups fresh strawberries, trimmed
1 tsp. vanilla extract
In a large heavy saucepan, combine egg yolks, 1/2 cup of the sugar, and 1 cup of the milk. Cook over medium heat, stirring constantly, until bubbles form around the edges. Remove from heat and chill for several hours.
In a blender or food processor, puree berries. Remove half of the berry puree to a small bowl and set aside. To remaining berries, add the remaining 1/2 cup sugar and blend 1 minute in processor. Pour chilled egg mixture, the sugared berries, vanilla, and remaining milk to ice cream freezer and freeze according to manufacturers directions. Upon serving, top with reserved pureed berries.
