Frittata Primavera

recipe ingredients
1 medium onion, chopped
1 medium red or green pepper, cut into strips
1 medium potato, peeled and grated (about 1 cup)
1 cup coarsely chopped broccoli
1 teaspoon dried oregano leaves
1/8 teaspoon ground black pepper
1 tablespoon margarine or butter
1 cup egg substitute

recipe directions
Cook onion, pepper, potato, broccoli, oregano and black pepper in margarine or butter in 10-inch nonstick omelet pan or skillet until vegetables are tender-crisp. Beat egg substitute for 2 minutes with mixer at high speed, until light and fluffy; pour over vegetables. Cover and cook over medium heat for 5 to 7 minutes until set. Serve from pan or carefully invert onto warm serving plate. Serve immediately.
