1/4 cup fresh chopped basil, loosely packed
6 sun-dried tomatoes, not packed in oil
enough boiling water to cover dried tomatoes
1 tomato, coarsely chopped
1 tsp. minced garlic
1/4 cup cold water
2 Tbsp. balsamic vinegar
1/4 tsp. salt

Cover sun-dried tomatoes with boiling water and set aside to soften. When the sun-dried tomatoes have softened, drain and combine them with the fresh tomato pieces, garlic, basil, cold water, vinegar and salt in a food processor and process until blended. Refrigerate until serving time.
