Five Tomato Salad

recipe ingredients
Dressing:
2 Tbsp. olive oil
2 Tbsp. white wine vinegar
1 Tbsp. thinly sliced green onion
2 tsp. chopped fresh basil
1 tsp. sugar
1/2 tsp. Dijon mustard
1/4 tsp. salt
Salad:
3 Roma tomatoes, sliced
2 med red tomatoes, sliced
1 med yellow tomato, sliced
1/2 cup red cherry tomatoes, halved
1/2 cup yellow cherry tomatoes, halved
fresh spinach leaves
1/4 cup crumbled feta, Gorgonzola, or blue cheese
Fresh ground black pepper

Combine dressing ingredients in a jar and shake well.
Line 6 plates with spinach leaves. Divide tomato slices among plates. Drizzle with dressing. Sprinkle with cheese and black pepper.
